This sushi roll features fresh Quebec salmon and local ingredients for a unique twist on traditional sushi.

    Rinse the sushi rice under cold water until the water runs clear.

    In a pot, combine the rice and water; bring to a boil, then reduce heat and simmer for 20 minutes.

    Remove from heat and let it steam for 10 minutes, then mix in rice vinegar.

    On a bamboo mat, lay a sheet of nori shiny side down.

    Spread a thin layer of rice over the nori, leaving a border at the top.

    Add slices of salmon, avocado, and cucumber. Roll tightly and slice into pieces.
